SONY AI GASTRONOMY: THE AROMATIC SCIENCE OF CHARTIER IN DIALOGUE WITH ARTIFICIAL INTELLIGENCE
Since January 2019, François Chartier has been an advisor to the research committee of Sony’s new project SONY AI Gastronomy, in Tokyo.
SONY Music Solution has been Chartier’s business development agent in Japan since 2018. They also represented starred chef Joël Robuchon in Japan for more than 25 years in the Land of the Rising Sun. Sony Music’s presence in the world of gastronomy is therefore not a first!
Based in Barcelona since 2016, Quebec-born François Chartier has been on an aromatic quest since the late 1980s. His goal is to understand the impact of aromas in our daily lives, more specifically in gastronomy, wine, and various beverages. Chartier’s background is unique and brilliant: he is at once a sommelier, cook, columnist, author, researcher, consultant, trainer, lecturer, sake master blender and adviser in Artificial intelligence research.

Since 2014, François Chartier has been an aroma consultant for Cacao Barry, the world’s foremost cocoa processor and chocolate manufacturer which produces a complete range of high-end couverture chocolates and a host of products for the pastry and chocolate industry. Chartier’s collaboration has been even more fruitful since Cacao Barry has established branches of its Chocolate Academy around the world in recent years.
